"Summer Eats"
Have you fired up the grill yet? The Groses sure have. I think we could just sit on the patio and grill and gorge ourselves all summer if we had our way!
You’ll probably be hosting your own fair share of cookouts this summer as well as attending a few. There’s always the challenge of finding something to “go with” the hamburgers and hot dogs other than the traditional baked beans and potato salad. My sister-in-law, Debbie, passed along this recipe and I need to tell you, when you layer it in a clear truffle, pedestal bowl, it actually looks pretty doggone impressive! The beauty is in the ease of preparation for busy mommas and the delicious taste. Let me know how you like it.

Cornbread Salad
Mix together:
1 oz. pkg. ranch dry salad dressing mix
1-cup sour cream
1-cup mayo
1 Jiffy cornbread mix (add 1 T. sugar), baked and crumbled
2 – 16 oz. cans pinto beans, drained
Mix together:
3 large tomatoes, chopped
½ cup bell pepper, chopped
1 small onion, chopped
2 cups cheddar cheese, grated
10 slices bacon, cooked and crumbled
2 – 17 oz. whole kernel corn, drained
Layer in bowl:
½ of crumbled cornbread
½ pinto beans
½ pepper/onion/tomato
½ cheese
½ bacon
½ corn
½ salad dressing
On the 2nd layer, layer the same except end with the salad dressing topped with the cheese.
